Chicken tacos with melted cheese
Ingredients:

* 2 chicken breasts (thin sliced)
* 6 small taco shells (soft corn or flour)
* 1 onion (sliced)
* 1 bell pepper (sliced)
* 1 tomato (optional, chopped)
* 1 cup shredded cheese (cheddar or mozzarella)
* 2 tbsp oil
* 1 tsp each: salt, black pepper, paprika/chili powder
* ½ tsp garlic powder
* Optional: taco seasoning, chili flakes, sauce (mayo + hot sauce mix)

Steps:

1. Cook chicken:
Heat oil, add chicken, season with salt, pepper, paprika, garlic cook until golden and fully done shred or slice.
2. Cook veggies:
In same pan add onion + bell pepper saute until soft add tomato cook 2 3 min.
3. Mix:
Add cooked chicken back mix everything well ? adjust seasoning.
4. Assemble tacos:
Place mixture on taco shells add cheese on top.
5. Melt cheese:
Cover pan or microwave 30 60 sec until cheese melts.
