Beef and Gravy | ||
2 pounds beef diced 1 teaspoon pepper 1/2 teaspoon salt 2 tablespoons olive oil 1 onion, diced 2 cloves garlic, minced 2 cups no-sodium beef broth 3 tablespoons Worcestershire 1 cup corn and peas In a pan, heat olive oil to medium heat. Start cooking the beef and season with salt and pepper. Reduce heat to low, then add the onion and garlic. Continue cooking, stirring occasionally, for 5 minutes. Add 1 cup beef broth, Worcestershire sauce, stirring. Cover with lid and let simmer over low heat, stirring occasionally. Up to 30 minutes. The longer the beef simmers, the more tender they are. :) Right before you are ready to serve, boil the peas and corn in the meantime. In a small pot add the other 1 cup of beef broth using hot water. And make a gravy from that by whisking in flour, 1 tbsp at the time, until you are happy with the thickness. Pour the gravy mixture into the beef and stir to combine. And add corn and peas. Cook for about 2 to 4 minutes until gravy has thickened. Serve over mashed potatoes. | ||
