Greek Lemon Potatoes | ||
Ingredients 4 large potatoes peeled and cut into wedges 1/2 cup olive oil 2 teaspoons dried oregano 1/4 cup lemon juice 1/2 teaspoon salt 1 teaspoon cracked black pepper 1 cup vegetable stock Instructions Heat the oven to 180 degrees Celsius. Place potatoes in a roasting pan with all the other ingredients and mix well. Cook for 1 hour, or until potatoes are golden and soft in middle. Drain the liquid and serve with protein of your choice or a salad. | ||
