Cheesy Veggie Quesadilla | ||
Ingredients: 2 large tortillas 1/2 cup shredded cheese (cheddar or mozzarella) 1/4 cup chopped onion 1/4 cup chopped bell pepper 1/4 cup sweet corn (optional) 1 tbsp oil or butter Salt & pepper to taste Pinch of chili flakes or herbs (optional) Instructions: 1. Heat a pan on medium heat. 2. Add oil, then saute onion, bell pepper, and corn for 2 3 minutes. Add salt, pepper, and spices. 3. Place one tortilla on a clean surface, sprinkle half the cheese on one side. 4. Add the sauteed veggies over the cheese, then top with the rest of the cheese. 5. Fold the tortilla in half and place it in the pan. 6. Cook 2 3 minutes per side until golden brown and cheese is melted. 7. Cut into wedges and serve with salsa or yogurt. | ||
