Smoked chicken breast with a plum compote

This is quite an easy dish to compile.
If you have a smoker, this is simple. If not use a barbecue with a lid (a weber is good) light it up without using kerosene or fire starters. If you do not have a barbecue, wait until the neighbour goes out and use their barbecue.
Toss some charcoal on to flame, when the flame has died the charcoal will still be hot. Place wood chips (I use coconut husks) on top of charcoal so that it smokes.
Place a baking tray of water on to the grill, place the small grill over the water. Then place the chicken or duck breast on to the tray.
Baste the meat every 10 minutes with cooking oil mixed with a few spices. Smoke the breast for around one hour. Take the meat out of barbecue, let it cool and then slice thinly.
Compote is simply a fancy European name for jam that has not thickened. Grab some jam out of wherever it lives and mix it with a small amount of water.
This is great as a party dish.
The photo is of duck breast, I smoked this in a weber style barbecue. It is with plum jam made by a friend in NZ.
