Easy Crispy Beef Burrito | ||
This will be ideal for mid week dinner. Doesn't take too long to make and is very versatile. All depends on what you have got in your fridge and pantry. Ingredients: 800g ground beef ( can use chicken or pork) 1 medium onion, finely chopped 1 can of diced tomatoes 1 can of chilli beans with juice ( can use black beans) 1 tsp ground cumin 1/2 tsp paprika 1/2 tsp salt and pepper to taste 6-10 inch flour tortillas 2 cups of shredded cheddar cheese Directions: 1. Fry mince till brown, add onion. Fry till onion is soft. 2. Add one can of tomatoes, one can chilli beans 3. Add ground cumin, paprika, salt and pepper 4. Bring them to boil, simmer till hardly any juice left 5. Assemble burrito. Sprinkle some cheese on top of burrito, then add 2/3 cup of mince contents, then sprinkle more cheese on top. Fold up burrito. 6. Fried burrito lightly on both sides till golden brown | ||
