| Baked Cheesy Chicken with Potatoes and veggies | ||
Ingredients: 3 chicken breasts (or thighs) 3 4 potatoes, thinly sliced 1 onion, sliced 1 cup cherry tomatoes (or sliced tomatoes) ½ cup mushrooms (optional) 1 1½ cups shredded cheese 2 3 tbsp olive oil 1 tsp garlic powder 1 tsp paprika ½ tsp black pepper Salt to taste ½ tsp dried oregano ½ cup chicken broth or water Method: 1. Preheat oven to 190°C (375°F). 2. In a baking tray, add potatoes, onion, tomatoes, and mushrooms. 3. Drizzle olive oil, add salt, pepper, garlic powder, paprika, and oregano. Mix well. 4. Place chicken pieces on top. Season lightly with salt and pepper. 5. Pour chicken broth around 6. Cover with foil and bake for 35 40 minutes. 7. Remove foil, add generous cheese on top of chicken. 8. Bake uncovered for 15 20 minutes until cheese is golden and chicken is cooked. 9. Let rest 5 minutes and serve warm. | ||
