Lemon Chicken Pasta
2 Chicken Breasts diced
Pasta (any you prefer, penne, spaghetti)
2 tbsp Olive Oil
3 cloves Garlic minced
Juice of 1 lemon
1/2 cup chicken broth
1/4 cup grated Cheese
Spring onion finely chopped (optional)

Begin by cooking your pasta according to package instructions. (Reserve 1/2 cup of pasta water before draining it.)
While pasta is cooking, heat the olive oil over medium heat in a large skillet. Season the chicken with salt and pepper then place them in the hot skillet. Cook for about 7 minutes. Remove the chicken and set aside.
In the same skillet lower the heat and add the minced garlic. Saute it for 30 seconds. Then, add the chicken broth, lemon juice. Stir to combine.
Add the chicken back into the skillet, along with the cooked pasta. Toss everything together, adding the reserved pasta water to bring the sauce together and coat the pasta evenly.
Serve with grated cheese and spring onions. (Optional)
