Delicious One Pot Sausage and Rice with Baby Spinach skillet

This sausage and rice casserole makes a great no fuss dinner for week nights. It is quick and easy, yet delicious. This recipe is on my regular meal roster.
Ingredients:
1 pack of Beef sausages (or sausage of your choice)
1 large onion
1 can of whole peeled tomatoes
1 tsp of cayenne powder (optional)
1 tsp crushed garlic
1 tsp paprika
2 cups of beef stock
2 cups of rice
4-6 stalks of celery
250g baby spinach ( or veg of your choice)
Salt and pepper to taste
Dash of oil
Method:
1) Chop sausages into chunks and dump them into a large pot. Fry them in oil until brown.
2) Finely chopped onion and add them and garlic into the pot. Fried them thoroughly with sausages.
3) Add a can of tomato, paprika, cayenne powder, beef stock, rice, salt and pepper into the pot. Bring them to boil and then simmer for 1 hour or until rice is fully cooked.
4) Cut celery into pieces and add baby spinach into the rice dish.
5) Mix everything together thoroughly. Bon Appetit.
