One pan Delicious Mince and Rice Skillet
This is such a great recipe especially for weeknights! It is very quick to throw all the ingredients together, yet so tasty too. Your family is going to love this!

Ingredients:

Dash of oil
800g-1000g Beef mince
1 large onion (chopped)
250g baby spinach
4 medium Zucchini (chopped)
1 tsp curry powder
1 tsp mixed herbs
1 can of whole peeled tomatoes
1 cup of water
2 cups Beef stock
2.5 cups Rice
Salt and pepper to taste

Method:

1) Chop onion and Zucchini, set aside for later.

2) Brown mince in a wok. Add chopped onion. Fry until lightly brown.

3) Add a can of Whole Peeled tomatoes, water and beef stock. Then add rice. Also add in mixed herbs, curry powder, salt and pepper.

4) Gently combine everything, wait for it to boil, then simmer for 45 mins or until rice is all soft. Then add in spinach and chopped zucchini.

5) Cook a further 15-20 mins until zucchini is soft. Mix until all combined.
