Shakshuka (Baked Eggs in Tomato Sauce)

Ingredients
1 tablespoon olive oil
1 red onion diced
1 teaspoon chilli flakes
2 cloves garlic sliced
1 can crushed tomatoes
1 tablespoon tomato paste
1 teaspoon mild paprika
1 teaspoon sugar
4 eggs
Salt and pepper to taste
Parsley to garnish

Instructions
Heat the oil in a frying pan, add onion, garlic, chilli flakes and paprika and fry for 2 minutes. Add the canned tomatoes, tomato paste, salt, pepper and sugar, simmer for 8 to ten minutes until thick.
Using the back of large spoon, make 4 dips in the sauce then crack an egg into each one. Put a lid on the pan and cook over a low heat for 6 to 8 minutes.
Garnish with parsley and serve with crusty bread.
