Salmon with Hokkien noodles | ||
INGREDIENTS:- Two salmon fillets, preferably with skin on (I wait until these are on sale because they can be terribly expensive) Packet (450g) fresh Hokkien noodles One cup water Two tablespoons soy sauce Half cup chopped parsley Juice of two lemons Pepper to taste METHOD:- In a large frying pan, cook salmon, making sure to crisp up the skin. Remove from pan and flake the fish into small chunks. Cut the crispy skin into small pieces. Place the noodles into the frying pan with the water. Cook until most of the water has been absorbed, then return the salmon to the pan, along with the soy sauce, parsley, lemon juice and pepper. Mix thoroughly and serve. | ||
