Greek Butterfly Lamb Roast with lemon | ||
This recipe is a tender butterfly lamb combined with a zesty lemon marinade infused with garlic, rosemary, and a hint of honey. It is a very scrumptious dish to tickle your taste buds, one of my family favorites. Ingredients: 600-800g butterfly lamb (can use lamb leg if preferred) Marinade sauce 1 large onion (finely chopped) 4 tbsp olive oil (or oil of your choice) 4 tbsp lemon juice ( or 1 large lemon and zest) 2 tbsp honey (add 1 more tbsp if prefer sweeter) 2 tbsp mustard 3 tsp crushed garlic 2 tsp dried rosemary 2 tsp paprika Salt and pepper to taste Method: 1) Chop onion finely. Melt honey. Prepare the marinade sauce. Mix all ingredients thoroughly. Put the butterfly lamb in a big bag. Carefully pour the marinade sauce onto the lamb in the bag. 2) I like to marinate this overnight for maximum flavour. I recommend marinating the lamb for at least 2 hours in the fridge. 3) Place the marinated lamb in an oven proofed baking dish. Carefully transfer the marinade into the dish. Cover with foil. 4) Bake at 130 deg for 2 hours. I like to slow cooked this for maximum tenderness. 5) I serve this marinated butterfly lamb with roast potatoes and vegetables. Enjoy! | ||
