Classic Grilled Cheese Sandwich with Tomato Soup

Ingredients (Sandwich):
4 slices of bread
2 tbsp butter
4 slices cheddar

Ingredients (Soup):
2 cups canned or fresh tomato purée
1 cup vegetable or chicken broth
1 tbsp olive oil
1 onion
2 cloves garlic
Salt and pepper to taste
Fresh basil for garnish

Instructions:
1. For the soup: In a pot, heat olive oil and sauté onion and garlic until soft. Add tomato purée, broth, salt, and pepper. Simmer for 10 15 minutes. Blend until smooth if desired. Garnish with basil.
2. For the sandwich: Butter one side of each bread slice. Place cheese between two slices. Grill on a pan until golden brown and crispy on both sides.
3. Serve the hot sandwich with warm tomato soup on the side.
