| Southern Texas Beef Stew | ||
This is my mum's recipe. It has been in our family dinner rotation for more than a decade. It is an easy one pot beefy, smokey and incredibly satisfying dish, guaranteeing a thumbs up from your loved ones. Ingredients: Dash of oil 500g beef mince 500g chuck steak 200g bacon (optional) 6 sausages (flavour of your choice, I choose spicy) 1 large onion ( chopped) 1 can of whole peeled tomatoes 1 tsp crushed garlic 1 can of beans ( of your choice, I use chili beans) 2 cups beef stock 1 tsp cumin powder 1 tsp chili powder (optional) Salt and pepper to taste Method: 1) Cut up chuck steak and bacon into cubes. Pour in some oil in a big wok, fry chuck steak, bacon and mince until brown. Add onion and crushed garlic. 2) Add browned and cut up sausages into the wok. 3) Then add a can of whole peeled tomatoes, beef stock, beans, chili and cumin powder, salt and pepper. 4) Bring pot to boil. Then reduce heat to low, simmer for 1.5 to 2 hours, stir occasionally. 5) I serve this with bread rolls, potatoes and vegetables. | ||
