Lemongrass Chicken | ||
This dish has to be prepared while drinking white wine. Failure to drink wine means that you may be hit by lightning. (well, at least that is my excuse for drinking while cooking). INGREDIENTS *1 kg diced chicken. *3 sticks lemongrass (bruised). *Bay leaf & lime leaf. *400 ml coconut milk. *3 tbs oil for cooking. SPICES * Chilies with seeds removed. (to own taste) * 2 tbs finely chopped lemongrass. * 1 tbs galangal. (this is a mild ginger) * half tbs turmeric. * 1 tbs garlic. * 7 tbs chopped shallot * White pepper and salt to own taste. METHOD *Grind all the spices into a paste. Then fry in oil for 4 minutes. * Add chicken and mix with paste. Add bruised lemongrass, bay leaf and coconut milk. Simmer for 40 -50 minutes. Bay leaf and lemongrass can be removed or left as part of the presentation. The white "flower" on top of the chicken is made from the stem of a spring onion. It is sliced end on a number of times and then put into iced water. To Black Lives Matter and fellow vegetarians, the chicken can be replaced with tofu or tahu. | ||
