Lasagna Soup
250g curly lasagna sheets, halved 500g beef mince
1 tablespoon butter
1 large onion, diced
1 large carrot, diced
2 cloves of garlic, minced
2 x 400g cans diced tomatoes
50 ml vodka
2 tablespoons parsley, chopped
1/2 teaspoon chilli powder
1/2 cup beef stock
Grated parmesan, garnish

In a large saucepan of boiling salted water, cook lasagna sheets for 8 to 10 minutes or until tender. Let cool slightly and cut in half.

In a medium saucepan, over medium heat add a 1/4 cup of water and beef and cook until brown. Drain beef.

In the same saucepan add butter, onion, carrot and garlic and saute until soft. Add diced tomatoes, vodka, parsley chilli and stock. Stirring to combine.

Gently stir in beef. Bring to the boil and then simmer for 10 minutes.

Gently fold sliced lasagna sheets into the soup and cook with lid on for 5 minutes.

Garnish with grated parmesan.
