Easy Fried Rice | ||
Hey everyone! I wanted to share a super easy and tasty fried rice recipe that s perfect for a quick lunch or dinner. It s great for using up leftover rice and whatever veggies you have in the fridge. You can make this all the time when you don t feel like doing anything complicated but still want something warm and filling. Ingredients: 2 cups cooked rice (cold/leftover rice works best) 2 tablespoons oil (vegetable or sesame) 2 eggs (optional) 1 small onion, chopped 2 garlic cloves, minced 1 cup mixed frozen vegetables (peas, carrots, corn, etc.) 2 3 tablespoons soy sauce (adjust to taste) 1 teaspoon sesame oil (optional) Salt and pepper to taste Spring onions (optional, for garnish) Instructions: If using eggs, heat 1 tbsp oil in a pan and scramble the eggs. Set aside. Add remaining oil to the pan and sauté onion and garlic for a minute or two. Toss in the veggies and stir-fry for a few minutes until heated. Add the rice, break up any clumps, and mix well. Pour in soy sauce and sesame oil (if using). Stir everything together and fry for a few more minutes. Add the eggs back in, mix, and season with salt and pepper. Top with spring onions if you have them. Done! | ||
