Easy Curried Sausages

Ingredients

1/2 tbsp oil
500g Sausages of choice (beef, chicken, pork or vegetable sausages)
2 garlic cloves, minced
1 onion sliced
1 carrot sliced
1 tbsp curry powder
1 tsp chilli flakes (optional)
3 tbsp flour
2 cups (500ml) stock of choice
1 tsp sugar
1/2 tsp salt
1/2 tsp black pepper
1 cup frozen peas

Instructions

Heat oil in a large frying pan over medium high heat.
Cook sausages until browned on all sides, then remove and cut sausages into pieces. Set aside.
In the same pan, add garlic, onion and chilli flakes if using. Cook for 2 minutes until softened.
Add curry powder and stir for 30 seconds.
Add flour and mix for 30 seconds.
Gradually pour in stock, mixing constantly.
Add carrots, sugar, salt and pepper, stir well.
Add sausages and peas, bring to simmer and cook for 10 minutes or until sauce thickens.
Serve with mashed potato.
