Skillet Chicken and black beans | ||
Chicken breasts, cut 1 can Black beans 2 Garlic cloves chopped 1 Onion, diced 1 can Tomatoes 1 cup Chicken broth 1cup cooked white rice 1 tsp Salt and pepper 1tbsp Olive oil 1tsp Cumin Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, and cumin. Cook until golden. Remove and set aside In the same skillet, saute onion and garlic about 3 minutes Add rice, stirring to coat in the oil. Pour in chicken broth, diced tomatoes, black beans, and chopped chiles. Give it a stir and let simmer for 10 minutes Stir occasionally. If it needs more water add a little more so the rice doesn't stick to the pan. Then add the chicken back to the dish. | ||
