Easy clam or mussel soup.

Ate this in Vung Tau for the first time yesterday. Very simple to put together.
1 kg clams or mussels.
Fresh cumin (chopped).
2 tomatoes (chopped).
1 onion (chopped).
Lemongrass (bruised)
Egg tofu.
Salt, pepper and ginger to own taste.
Water to own required amount.

Mix all ingredients except clams. Simmer for 10 minutes. Add clams. Simmer for another 5 minutes until clams open. Discard any that do not open. I had this with a few vodkas but that is up to you. Same goes for chillies, add a couple if you like them. I like most spices but am not a fan of chillies.
