Ahh Jann , l can't tell you how many gazillions of these I pumped out over my years of cooking, l'm having flashbacks!!
The mini ones were the most popular , people would want them still warm out of the oven ! I have to have my baked cheesecakes cold ! I used to make up a Berry mix using frozen blackberries, raspberries and strawbs and blueberries.. put a good spoonful of sugar over them and zap it for a minute or 2 in the microwave. So they still hold the shape but are nice and glossy. Then when the cheesecake is just about ready , l put some of this in the middle and return to the oven for a few minutes more.Even fancier I would sometimes add some rosewater or rose syrup to the berries in summertime.
